Red Cabbage & Seedy Slaw

- ½ medium sized Red Cabbage
- 2 medium sized carrots
- ½ cup crushed roasted almonds
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 1 tblspn Lemon juice
- 2 tblspn Sesame oil
1. Grate carrots & finely slice red cabbage. 2. Mix together with seeds, lemon juice & oil. 3. Serve as a side or as a base with fresh fish or steamed chicken breast.
Great way to bulk make for dinner & lunches the next day.
Store in an airtight container.
For leftover lunch option, serve with 2 boiled eggs & few pieces of haloumi.
